I had to create a dessert tonight on the fly for a special party. The menu was already written: Puff pastry, fruit compote, mascarpone cheese, fromage blanc, honey.
I used the two cheeses to make a mousse. I perfect diced some honeycrisp apples, and poached them in white wine and honey. Then I reduced the poaching liquid to make an apple-honey syrup. I simply layered the ingredients like a napoleon. It doesnt look like much, but it tasted great. I’d like to refine the presentation in the future, but for the time I had to work with tonight, I think it came out great!
